    Laab Lettuce Cups

    This addictive thai dish features spicy ground pork spiked with chiles, lime, fish sauce, basil, mint and cilantro a contrast in texture to crisp lettuce. The perfect lunch or dinner, this dish is healthy and flavorful.

    Ingredients

    3/4 lb ground pork
    1 head of boston or iceburg lettuce
    3 sprigs basil
    1/4 bunch cilantro
    5 sprigs mint
    4 cloves garlic
    5 thai chilis or serranos
    1 red onion
    1 lime
    3 tbsp fish sauce
    2 tbsp honey
    2 tbsp sesame oil
    1 tbsp rice vinegar
    sriracha for serving

    Equipment

    Preparation

    Dice the garlic.

    Finely slice the thai chiles.

    Finely slice the onion.
    Remove the leaves from the stems of the cilantro, basil, and mint.
    Remove the bottom stem from the lettuce, and separate the leaves.
    Squeeze the lime juice into a bowl. Combine with the fish sauce, rice wine vinegar, and honey.
    Place a large skillet on medium heat. Add the sesame oil. Once the oil is hot, add the garlic and thai chiles. Sauté until the garlic starts to turn a golden color.
    Add the red onions to the pan and sauté until the onions are tender.
    Add the ground pork and brown in the pan.
    Once the pork has browned, add the lime juice mixture, cilantro, basil, and mint. Sauté to mix the sauce and herbs.
    Serve the laab in the lettuce cups with the sriracha.

    This is one of our favourite dishes, it is so easy to make and is absolutely delicious! We usually make rice to go with it.
